Missing my Norwegian bread, what a nice excuse to buy a bread making machine

This autumn I moved to Scotland to stay for a couple of years and I find it a great adventure. Lots of good food to taste and places to see. The only food I have been missing, is "proper" Norwegian bread and now it is time to do something about it; yesterday I bought a bread baking machine. I have not really considered buying a bread baking machine, previously, as I love kneading and the whole process of making breads and buns, but I realise that I will be too tired after long working hours to come home and make bread, hence this new machine. I bought the Panasonic automatic bread-maker (SD2501), mostly because it was strongly recommended by a colleague and because it has a reasonable price.

And today (that is tonight) the bread-maker has produced my first bread. 


Seeded wholemeal loaf (Large)
1 tsp dry yeast
100 g strong white flour
375 g strong wholemeal flour
1 tsp sugar
1 1/4 tsp salt
2 tbsp rapeseed oil
350 ml water
3 tbsp sunflower seeds
1 tbsp pumpkin seeds

To wake up to freshly baked bread is marvelous, although I must admit that I woke up a little earlier that planned, probably just because I was curious about how the bread-maker was getting along.
I had my freshly baked bred with butter and Jarlsberg cheese. Yum. 

Next time I will ad a little more salt, and try to experiment with using different flours. I think wholemeal by itself often is a little boring. I will also increase the crust colour to give the crust a little more crunch to it, more similar to what you would get in a normal oven.
