Traditional Norwegian Waffles


When I was young, we used to make waffles as often as we could. In Norway waffles are often served with brown cheese and jam or sour cream and jam. Making waffles is also a smart way of using leftover cream, Cremé Fraiche or sour cream, add these ingredients as a substitute for the milk. You need a waffle maker like this to make your waffles.



Ingredients
150 g salted butter, melted
4 dl milk (I use whole milk or semi-skimmed)
4 large eggs
6-8 tbsp caster sugar
1 tsp ground cardamom
1 tsp baking powder
300 g flour (plain)
1/2 tsp vanilla extract


To make the batter:
Melt the butter. Mix eggs and sugar in a large mixing bowl. To get a batter without lumps, it is best to add the dry ingredients to the egg-mixture with just a little bit of the milk. Then gradually add more milk and add the melted butter at the end.
Let the batter rest for about half an hour before you start making the waffles.
